Insanely Simple Shrimp Cakes

My man loves crab cakes but OWCH they’re pricey.   Necessity being the mother of invention spurred me on to create this recipe.   Here in Florida, you can get fresh shrimp off the boats for $5 a pound.  If you can’t get shrimp where you are, use a few fillets of fresh fish.

20 raw Shrimp, cleaned & de-shelled
¾ c. Bread Crumbs (I just crumble up fresh white bread)
¼ c. crushed Crackers
1 tsp.Old Bay Seasoning
¼ Onion minced

Chop shrimp fairly fine and combine with all the rest.  I use a ¼ cup measure to dole out the mix and hand form into cakes.  Melt butter over medium heat.  Lay cakes gently in.  Cook for about 2-4 minutes on each side depending on the size you’ve made them.

Makes 8 cakes or thereabouts.   Serve with coleslaw.
