2 Oranges, peeled and sliced thinly (remove any seeds)
2 Small Avocados , peeled, de-pitted, and cubed
Juice of 2 Lemons
1/4 cup Olive Oil
1 Tbsp. Chopped Fresh Tarragon or Parsley
1 pinch of Salt & Pepper
1 Large Homegrown Tomato, chopped (Vine-ripened if it’s store bought)
1 Small Red Onion, sliced very thinly
10 pitted Green or Black Olives (canned not jarred)
1/4 cup Sliced Almonds

Lay the orange slices on a plate in a circle, overlapping each slightly over the last. Prepare the avocado and toss it in half of the lemon juice, set aside.

Combine the remaining lemon juice with oil, herb of choice, salt and pepper. Toss the tomato, onion, and olives into the dressing and pour over the plated orange slices. Sprinkle almonds slices over top.

This is not the sort of salad you can make in advance, nor does it keep. Make it, serve it, share it, and eat it!
