Fall's Glory

Stave off the Chill of Fall's Bite

It’s not the prettiest dish but it’ll warm your belly! With the onset of Fall, it’s the bowl of comfort you’re seeking! Serve it with warm tortillas, or beans and rice.

1 Tbsp. Olive Oil
1 lb. Ground Beef or Chicken
2 Green Pepper, chopped coarsely
2 Onions, chopped finely
1 Clove of Garlic, minced
1 tsp. Parsley
1 tsp. Ground Cumin
1 pinch of Cayenne Pepper, OR a Deseeded Jalapeno, OR a splash of Hot Sauce
1 cup of Tomato Sauce OR 2 Fresh Tomato chopped
1/2 cup to 1 cup of water depending on how saucy you’d like it
½ tsp. Salt

Heat oil in a large fry pan. Add ground meat and brown. Add onion, cook til nearly soft. Add everything else, turn heat to low, cover with lid, and simmer for 15 minutes or so. Mound in a bowl and surround with smaller bowls of toppings. Serve with rice and beans, or warmed tortillas.

*Toppers; Slices of Hard-boiled Egg, Chopped Almonds, Olives (canned not jarred), Wedges of Avocado drizzled with lemon

**For a taste a tad more warming; Delete the Oregano in favor of 1 tsp. of Allspice

***To Luxe it Up; When adding the tomatoes, add a splash of white wine with the chicken or red wine with the beef.
