Dan Dan Noodles or Peddler Noodles

Dan Dan Carrier

Vendor selling Street Food

A Dan Dan is the type of pole used by street vendors to carry a pair of baskets one on either side of their shoulders. The baskets contained noodles and sauce. It’s nutty with a kick and men do go bonkers for it!

Sauce
¼ cup Tbsps. Tahini Paste (made from Sesame Seeds) or Smooth Peanut Butter
3 Tbsps. Sesame oil
¼ cup Rice Wine Vinegar or Balsamic Vinegar
¼ cup Soy Sauce
2 Big Dashes of Hot Sauce or 2 Tbsps. Chili Oil
1 tsp. Sugar
1/4 cup Chicken Broth

12 ounces dried Noodles

Garnishes:
Handful of Roasted Peanuts
Shredded Cooked Pork or Chicken
Green Onions, chopped finely
Mustard Greens, Swiss Chard, or Spinach (Cut them in fine strips and throw them into the hot pasta water after you’ve finished cooking the pasta, drain, and arranged in a pile ontop of the pasta

Whisk tahini or peanut butter, oil, vinegar, soy, hot sauce, and sugar together. When smooth, whisk in chicken broth. Store in a clean lidded jar in the fridge.

Prepare pasta of choice. I like thin spaghetti. Toss 2-3 Tbsps of Dan Dan sauce into each pasta serving. Garnish with nuts, and/or shredded meat, and/or wilted greens.

Serve this sauce over poached chicken and its called Bang Bang Chicken.
