These cookies are a Christmas tradition that should be indulged in rarely! They’ll melt in your mouth and land on your thighs. Share them with friends who need a little extra padding.
½ lb. Butter, at room temp.
½ cup Icing Sugar
¼ cup Cornstarch
1 ½ cups White Flour
1/2 tsp. Vanilla or Lemon Extract
Preheat oven to 350F.
Sift sugar, cornstarch, and flour together. With an electric mixer, beat butter. Turn off, then pour in half the shifted mix. Blend. Then using a wooden spoon, mix in the last half of the flour mix. Roll dough out into a ½” thick circle shape, lightly score with a knife into pie-shaped wedges. Use your thumb to make a light pressed imprint around the edge.
Bake for 15 minutes or until LIGHTLY golden.
