The common spud is a cheap choice. Stuffed with meat or fish and topped with cheese it can serve as a hearty lunch or with a bowl of soup, a speedy supper. When there’s no bread to be had, I’ve made it a day ahead, then wrapped it up for lunch on-the-go.

4 Large Potatoes
1 Can of Tuna, packed in oil and drained
OR Canned Cooked chicken, drained
1 cup of Sharp Cheddar Cheese, shredded
1 Green Onion, chopped

Nuke potatoes until cooked. The time depends on your micro. Cut each in half. Scoop out the flesh, leaving the skin intack. Mash the flesh with a fork, keep it lumpy. Stir in tuna, onion, and half of the cheese. Spoon the mix into the skins. Heap it up. Cover with remaining cheese. Nuke in the microwave for a minute or so…just until the cheese melts. Serves 4.
