A belly-warming toss-together meal or side dish made from leftover cold rice, a few veggies, and a little beef. The seasonings are of great importance when there are so few main ingredients. For a change up, sub out the beef for ground chicken.
1/2 lb. Ground Beef (80/20 lean/fat content)
1 Small Sweet Pepper, chopped finely
2 Green Onions, chopped
2 Cloves of Garlic, minced
1” slice of Fresh Ginger, minced
2 1/2 cups Cooked White or Brown Rice
1 Tbsp. Soy Sauce
1 Tbsp. Sesame Oil
1 Tbsp. Sake or Sherry
Pinch of Red Pepper Flakes
In a large fry pan, crumble beef, using your fingers to make approx. 1/2” size bits. Brown over high heat. Toss in sweet pepper, oinions, garlic, ginger, and rice. Reduce to medium heat and warm through. Add Soy Sauce, Sesame Oil, sake, and red pepper flakes just before serving.
Makes two main course servings or four side servings.
