Mustard Dressed Glazed Chicken Supper Salad for One

Glazed Chicken Salad with Warm Mustard Dressing

1 Chicken Breast (skinless and boneless)
Mixed Baby Green Lettuces or 1 Head Romaine Lettuce or A Few Generous Handfuls of Spinach
2 Tbsps. Balsalmic Vinegar
1 Tbsp. Olive Oil
1 Tbsp. Water
1 Tbsp. Grainy Mustard

Optional; 2 Slices of Bacon

The healthy version would be to poach the breast in water or broth with a few herbs but I’m not a fan of anything poached except eggs.  I saute the breast using as little oil as possible and deglaze the pan with a splash white wine or vermouth.   Slice the breast on the diagonal and then toss it back into the deglazing juices.  Lift out the meat and set aside.  Do not throw the pan in the wash yet.

Rinse and pat dry One Serving’s worth of Lettuce that’s approximately three handfuls or so depending on your appetite.

Whisk vinegar, oil, water, and mustard to together.  Toss into your pan with the deglazed juices, warm through on low. 

Now you have two options.  1. Dump your greens into the pan and lightly wilt them with the dressing.  Plate and top with chicken slices.  Or. 2. Drizzle the warm dressing over your greens in a bowl,   Top with chicken slices and FEAST! 

It seems simple enough but it is a delight.   Now if you want to be a little naughty and who doesn’t…  Just after you cook the chicken, and remove from pan, add a few slices of bacon to the pan cook up crisp or as you like it.  Remove, let cool.  Now onto deglazing the pan, as above with a splash of wine, then onto making the dressing in the pan.  In this naughty version, when you plate you’ll top the warm chicken slices with crumbled bacon.

 Of the three lettuce choices, my preference is the Baby Greens.  I grow them (Assorted Mesclun) here in the South in early Spring and late Fall.
