Saucy Chicken Pasta

1/2 Onion chopped finely
2 Garlic cloves minced
4 Tbsps. Olive Oil
1 Large Fresh Tomato
2 Chicken Breasts (skinless & boneless)
2 Splashes of Red Wine, White Wine, OR Vodka
2 Tbsps. Fresh Basil
Salt & Pepper to Taste

Pasta of choice

Cube Chicken, sauté in 2 Tbsps. oil, cook through, remove meat, season with salt & pepper to taste.   Deglaze pan with a splash of wine, vodka, or water if you’re on the wagon. Douse the chicken cubes with your deglazed juices. Set aside while preparing the tomato sauce. Use the same pan to saute chopped onions in 2 Tbsps. oil until soft, add garlic.   Roughly chop the tomato and add to pan.  De-seed it if you’re fussy, I’m not. Cook until the tomato just begins to break down. Add that second splash of wine or vodka. 
Puree sauce in blender and return to the pan. Plonk your chicken cubes in and let rest while you prepare your pasta.

Prepare your pasta of choice. I’m currently into whole wheat linguini. Drain pasta and toss in the sauce. When plating, sprinkle parmesan cheese and minced basil ontop.

Serve with crusty French bread and vino! Don’t forget the candles darling and music. 🙂
