Naked Shroom Omelet

2 Eggs
2 Small Button Mushroom
2 Tbsps. Grated Cheddar Cheese or Cheese of Choice
Fresh Herbs (Parsley, Sage, Dill, or Tarragon) or a bit of Green Onion

Beat 2 eggs in a high-sided Microwave-proof bowl.  Add a splash of water or milk.  Thinly slice the mushrooms and drop ontop of the egg mix.  

Put in the microwave for 1 minute and 40 seconds.   Every microwave is slightly different so you may want to err on the side of less time rather than more.  There’s not much worse than an over-nuked egg.   They’re rubbery and gray and if they explode be prepared for a nasty cleanup.  

Remove the omelet from its bowl by sliding a spatula around the sides.   If it’s still runny underneath, let it sit for a shortwhile.   It will continue cooking while you grate the cheese.  

Slide your omelet onto a small plate, sprinkle cheese, and green onion or herb of choice.   Parsley has a fresh air taste.  Dill is slightly soapy.  Tarragon has a licorice flavor.  Sage is woody.  I grow most and love them all. 

A little fruit or some cherry tomatoes on the side and you’re set.  It’s a charming dish that takes no time at all to make.  Be sure if you plan on feeding it to the Night’s Conquest, you want him or her to stick around.  Feeding a man or woman in bed can be one of the best or worst choices you can make.  So serve wisely!
