
Meat loaf Recipe
2 lbs. Ground Beef1 lb. Ground Pork or Sausage meat (removed from casings)
1 Large Onion, finely chopped
1 Slice Stale Bread coarsely cubed 1 Garlic Clove 1 tsp. salt & 1tsp. pepper 1 tsp. Ground Summer Savory Spice
2 Eggs, beaten

Mix ingredients together, press into a loaf pan. I use a glass one. Bake at 350F for 60 minutes. Stick a knife in the loaf, if the juices run out clear, it’s done. If not, plonk it back in for a further 15 to 30 minutes. Once this magnificient mound of meat is ready, remove it from the loaf pan and set it on a platter. You don’t want it to sit in all of the grease that has run out.
Spiffed Up Variations
Stuffed Peppers; Press the mixture into halved green peppers. Bake for approx. 30 mins
Bacon Be-decked; Lay a few strips of uncooked bacon across the top of the loaf before putting it in the oven.
Meatloaf Burgers: Use a half cup measure to form hamburgers. Press mix into the measure and thump out. This way, you’ll get a nice uniform looking burger which will cooks evenly I do them on a stove top grill.
If you’re adventurous enough to want to cook them on a grill use INDIRECT HEAT. Leave the two outer burners on low to medium and the middle burner of your grill OFF, this is where the burgers are placed.
Not only are these absolutely lovely for supper HOT, but they make an extraordinary lunch COLD pressed between two slices of thick bread or a soft white bun. My man always has his with ketchup.
For a nod to the 60’s, serve your hot meat slices with green beans and mashed pototoes.
