2 thick slices of French Bread
3 medium thick slices of Sharp Cheddar Cheese
1 thin slice of Red or Vidalia Onion separated into rings
2 Tbsps. Unsalted Butter
Drizzle of Olive oil
1 Tbsp. Pesto

Assemble sandwich onion ontop of cheese inside the bread. Melt half the butter with a drizzle of olive in a pan over medium heat. Oil stops the butter from burning.

Place the sandwich in the pan, put a lid ontop, when I say ontop I mean directly ontop of the sandwich. It acts like a press. Turn the heat setting to low. Peak in a minute or two. Once the bread is golden, and the cheese has begun to droop down the sides, add the remaining pat of butter to the pan. Flip the sammy and repeat. Remove and spread topside with pesto.

This sandwich is simply divine with an ice cold beer for a quick lunch. Feed friends and lovers this fare and they’ll never leave!
