Dried lentils and peas are nutrionally rich, high in fiber, and incredibly cheap! They’re a staple in the vegetarian diet and should be included for non-veggies at least three times a week. This French Soup has long been a favorite of mine. I hope it will be for you too!

1 Carrot sliced thinly
1 Small Onion finely chopped
1 Small Potato diced
A splash of Olive Oil
1 cup Dried Green Split Peas OR Dried Yellow Split Peas OR Dried Lentils
3 cups of Water or Chicken Stock or Beef Stock
1 tsp Cumin
½ tsp Salt

In a pot, saute onions and carrot ‘til onions are translucent. Add everything else and simmer until the peas are soft. Will take approx. 30 minutes. Add more water or stock if the soup gets too thick.

Optional; Add ¼ cup of cubed Ham to simmering soup
Or, garnish with Crumbled Cooked Bacon

Other Toppings; Hard boiled Egg, Feta Cheese, Chives
