

Are you tired of turkey hash, turkey soup, turkey salad, and turkey casserole? Has turkey tuckered you out!!! Spring rolls are a tasty and healthy option to an endless array of too much leftover turkey!
2 ounces thin Whole Wheat Spaghetti
1/2 tsp. Chinese Five Spice
2 tsps. Sesame Oil
1 cup Cooked Cold Turkey, shredded
½ Carrot, peeled and grated
2 Lettuce Leaves, thinly sliced
8 Rice Wrappers
Dipping Sauce
2 Tbsps. Soy Sauce
1/4 cup Water
Juice of ½ Lemon
1 Clove of Garlic, minced
1/2″ piece of Fresh Ginger, minced or 1/2 tsp. Ground Ginger
1 tsp. White Sugar
A Dash of Hot Sauce or a pinch of Red Chili Flakes
In a small bowl, mix Dipping Sauce ingredients together and set aside.
Before preparing pasta, break noodles into thirds. Bring water to a boil, add pasta. Cook until el dente. Drain and throw into a bowl. Add spice, oil, meat, carrot, and lettuce.
Fill a bowl with tap-drawn hot water. Dip one wrapper into the water for a second or so to soften. Remove and lay out flat. In the center of the wrap, dollop a large spoonful of the stuffing mix, spread out leaving a 2” border bare. Fold edges inward and repeat with remaining wrappers.
Serve immediately with dipping sauce.
