Rosemary, Ground

Rosemary, Ground (Spain) – If I were on a deserted island and could only take five spices, this would be one of them.  The herb adds a piney, woodsy taste.  It’s like having a forest dance in your mouth.  I ALWAYS add a pinch to sautéing mushrooms, then freshly ground pepper, and at the end a dusting of salt…dolloped on a bit of toasted bread and you have a simple feast for one.  It’s excellent in many soups, rubbed on pork and chicken before roasting.
