Saigon Cinnamon, Ground

Cinnamon, Saigon (Vietnam) – A spice of antiquity obtained from the inner bark of a tree that is used in both dessert and savory dishes.  Cinnamon is said to have blood sugar regulating abilities.  I sprinkle it on fruit salad and Greek yoghurt with honey.  I keep some in a shaker to sprinkle it on my coffee every morning.  On naughty nights when only hot chocolate will suffice, it gives chocolate a kick. It is pungent, spicy, and sweet.
