Tortilla Quickie Fiesta for One

You can hardly count pressing a button on the Micro as cooking. But when you’re too tired to bother, a tortilla quickie is exactly what you want!

Two Whole Wheat tortillas
Grated Cheese
Canned Beans (Black Beans or Kidney)
Canned Corn (optional)

Place tortillas on a Microwave Proof plate.  Grate cheese onto tortillas.   Drain and rinse the canned beans, spoon a few tablespoons on top, sprinkle with a a tablespoon or so of drained canned corn.   Top wit a tad more cheese. Nuke for approximately 1 minute or until the cheese has melted.  Remove from Micro. Top with salsa.   Stuff into mouth.

Naughty additions;  Sour cream or French Onion Dip. Almost any creamy salad dressing will do in a pinch.

Quickie Salsa
If you haven’t got a jarful of the premade stuff
1 tomato finely chopped,
2 Tbsps. ketchup,
1 pinch of chili powder,
1 pinch of cayenne or a dash of hot sauce.  
If you’ve got some fresh cilantro, add a few torn leaves or a squirt of the tubed cilantro.  Delish!
