Roasted Chicken and Veggies, Sanity in a Pot

2 Whole Chickens
Assorted Fresh Herbs
or 2 Sticks of Celery and 1 Onion

Assortment of Onions, Potatoes, Carrots

Simple Gravy
4 Tbsps. Flour
2 cups White Wine or Broth
1 cup Milk
2 tsp. Salt & 1 tsp. Pepper

Simple Gravy
4 Tbsps. white flour
Stir flour into the Roasting Pan of drippings until smooth.
Turn heat on low.
Add 1 cup of Milk plus 2 cups of broth (or a mix of half water, half white wine)
Simmer gently til thick.
